This recipe is a delicious and easy option if you are hosting a dinner, cooking for your family, or just for yourself (be prepared for leftovers!) Seasoned vegetables roasted to perfection paired with a delicious ribeye steak will satisfy any appetite.

Cooking Tip:
Take your steak out of the refrigerator around 1 hour prior to cooking to bring it to room temperature. Bringing meat to room temperature keeps it from drying out, maintains the size of the steak, ensures an even cook and reduces refrigerator aroma.
Ingredients:
- 2 cups broccoli
- 2 cups cauliflower
- 2 large carrots chopped
- 1 large yellow onion chopped
- 1 cup cherry tomatoes
- 1 whole garlic peeled and minced
- 3tbsp. olive oil
- 1tbsp dried thyme
- 1tbsp dried basil
- Redmond Real salt to taste
- Black pepper to taste
- 1 1/2lb rib steak
Instructions:
- Pre-heat oven to 450f
- In a large greased roasting pan, place your broccoli, cauliflower, carrots, yellow onion and garlic in a single layer.
- Coat vegetables with the olive oil, thyme, basil, salt and pepper, and mix all together until evenly coated.
- Place roasting pan in the oven and bake for 15 minutes.
- While vegetables are roasting, season steak with salt and pepper and place in a skillet.
- Searing steak on both sides until browned, around 4-5 minutes per side.
- Next, remove your pan of vegetables from the oven and lower over to 400f.
- Add browned steak on top of the vegetables in roasting pan
- Place the pan back in the oven to bake for 15 minutes,
- remove from oven when done, let sit for 10 minutes and enjoy!
